Herbhaven is an artisan vermouth producer making delicious Australian vermouth in small batches in Melbourne, Australia.

In 2017, I was inspired by the explosion of creative Australian gin makers to create my own vermouth.   After many years of herb gardening and culinary experimentation and quite a few martinis, it seemed like a natural progression.

The vermouth making experiments started in 2017 in my home kitchen in Melbourne, Australia.  After months of experimenting and researching old recipes from Italy and France, the exotic mix of wine, spices, herbs and spirits  developed into a marvellous set of vermouths that were good enough to share with friends and neighbours.  Based on the encouragement of all the willing taste testers who urged me to put my vermouth on the market,  I  decided to set up a small vermouth business, and Herbhaven was born in 2018, with the aim of producing the first Herbhaven vermouth for customers by early 2019.

I was lucky enough to enjoy some study of vermouth making in Torino at the Slow Food Terra Madre food fair in 2018 and from that experience I gained confidence in bringing my own style to the creation of artisan vermouth.   

Herbhaven’s first vermouth was ready for sale in March 2019 and since then we have brought joy to people who love aperitifs and those who are new to the aperitif experience.
